Club Chicken Casserole

1/4 cup butter or margarine
1/4 cup all-purpose flour
1 cup chicken broth
1 14 1/2-ounce can (1 2/3 cups) evaporated milk
1/2 cup water
1 1/2 tsp salt
3 cups cooked rice
2 1/2 cups diced cooked chicken
1 cup sauteed mushrooms

Melt butter; blend in flour. Add broth, milk, and water; cook and stir over low heat till thick. Add salt, rice, chicken and mushrooms. Pour into greased baking dish. Bake at 350 degrees for 30 minutes.

Serves 8 - 10.

Note: I pre-cooked and diced the chicken and froze it, which made it much easier the day I made the casserole. You can put the casserole together earlier in the day and refrigerate until ready to bake.
